Pie "Galeta"
Delicious fruity pie.

Step 1
Cut butter into small cubes.
Step 2
Put flour, butter and curd cheese together into mixing bowl.
Step 3
With a knife or wooden spatula, cut butter and curd cheese incorporating them into flour (5-7 mins). Until there are no large chunks of butter or curd cheese.
Step 4
Add egg yolk and work the mixture with hands into a ball of dough. Save egg whites for a later step.
Step 5
Wrap the ball into cling film, slightly flatten it and leave in freezer for 25-30 minutes or fridge for 1 hour.
Step 6
Mix berries with sugar and flour. Add more sugar if berries aren't sweet.
Step 7
On the baking paper, roll out the dough until it's about half centimetre thick. Sprinkle a bit of flour to prevent the dough from sticking to the rolling pin.
Step 8
Transfer the dough on baking paper to the pan, then gently press to fit the shape.
Step 9
Spread berries evenly over the dough.
Step 10
Fold dough edges inward covering some berries.
Step 11
Brush whisked egg white over the dough.
Step 12
Sprinkle sugar on the edges for a crisp, sweet crust.
Step 13
Bake in pre-heated oven at 180 degrees (C) for 35-40 minutes.
